Recipes Galore! Dishing Up Romance

 With the release of Dishing Up Romance, I thought it only fitting to give you a recipe for love to whet your appetite!

Dishing Up Romance is the return of Cassie Pirelli, the only child of Lucy and Michael Pirelli and she doesn't cook!  As a matter of fact, she burns pizza in the microwave.  Of course, that is until she loses her job because her company went belly up.  So what else could she do?  Dad's retiring and he's giving her the space to open her own Kitchen Widget and Cooking Classes!  Available through Amazon and Barnes and Noble.  

This is one of my absolute favorite breakfasts!  Bon Apetit!

 

MAMA’S HUFFIN’ AND PUFFIN’ AND BLOWING THE HOUSE DOWN

                     APPLE CINNAMON PUFFED PANCAKE

           

3 eggs, beaten

            6 ounces milk

            ¾ cup flour

            1 tablespoon baking powder

            ½ teaspoon salt

            ½ teaspoon cinnamon

            6 tablespoons brown sugar

            3 tablespoons butter, melted

            1 teaspoon vanilla

            1 medium sized apple, sliced ¼ inch thick

Preheat the oven to 425ºF.  Turning up the heat won’t make your daughter rapidly fall in love, Mama, but she’s getting there.  She’s trying to hide it, but you’re on to her.  She’d have to get up pretty early in the morning to outfox the fox.  Just enjoy the expression on her face whenever he’s around—you’ll know when it’s time to go for the touchdown. 

In a large bowl, add the flour, baking powder, salt, cinnamon, two tablespoons sugar and blend with a whisk.  Add milk, eggs, two tablespoons melted butter, and vanilla.  Mix thoroughly.  Pour wet ingredients into the dry ingredients and whisk until the batter is thoroughly combined. 

Melt one tablespoon of butter in a small fry pan; add apples and sauté until softened—2-3 minutes.

Two to three minutes isn’t long enough for the daughter to admit she wants him in her life--especially not to you, but bugging her consistently hasn’t worked either.  At her age, this isn’t smart.  True, subtly has never been one of your strong suits, so keep the hints flying high.  Try working through the backdoor—you know, work on the guy.  That’s how Josephine Cici got her daughter down the aisle.  Okay, so maybe you don’t want to mimic her moves, but hey, you do what you gotta do.  The daughter won’t catch on until it’s too late, but you know she’s going to be happy in the end—and possibly thank you for intervening because she’s so stubborn.  It’s just a matter of getting her there.  Take baby steps.  Aww, you like the sounds of that pitter patter, don’t you?

TOPPING:

¼ cup flour

2 tablespoons brown sugar

¼ teaspoon cinnamon

2 tablespoons butter, firm and cut into chucks

Coat the inside of a 10” cast iron skillet with spray, making sure to coat the sides as well.  Layer the apples, sprinkle the topping over top of apples, and pour the batter over top.

Bake in a 425ºF oven for 15 minutes, lower heat to 375ºF and bake for another 10 minutes.  Turn over onto a large platter and slice into quarters.  Serve with confectioners sugar sprinkled over top, or butter and maple syrup.

In Shining Whatever

Last week In Shining Whatever celebrated it’s launch into the world. Libraries and book stores should be getting copies of it in at any time. I’m very excited about the second book in the Three Magic Words series. Kate and Hart were such fun characters to work with and we had such fun out on that island!


Kate Miller, Fancy Lynn Sawyer and Sophie McSwain had been best friends when they were in school in Albany, Texas. Then all three of them moved away in different directions. Fifteen years later they find themselves back in the same area and the first time they are back together they’re talking about why none of them are married. Fancy Lynn says that a man has to do more than just say the three magic words; he has to give her a forever thing. Kate says that he has to ride up on his big white horse like a knight in shining … and then she couldn’t remember the next word so she said, “In shining whatever.” And Sophie, who’d just gotten out of a bad marriage, said a man had to prove to her that there was life after wife.

A professional bull rider turned rancher, Hart Ducaine only has eyes for Kate, but she is one sassy piece of baggage—even more so than back when she was a teenager and she’d first caught his eye.

Hart had been the love of Kate’s life, but he hadn’t been interested in a long term relationship then, so why should she trust him now?

Trust is hard to regain once it’s been broken, and neither of them are willing to take chances with matters of the heart, not anymore.
